I typically just season my chicken breast with slap ya momma, basil, onion powder, garlic powder, and a little bit of lemon pepper (or lemon zest if you have it) and make like a dry rub and put it all around on it then throw it on my George Foreman grill for 8-10 minutes. Quick, simple, easy, delicious.
But a recipe my grandmother taught me when I was younger.. She called it "hobo chicken". Doubt she made it up herself.
Take 2 chicken breasts and place them in aluminum foil. Add broccoli, cauliflower, baby carrots, onions, some peppers, and season as desired and close up the foil and wrap it up tight to make a good seal. Cook bake at 375 for an hour, the vegetables will steam up nicely and all of the flavors will mingle and permeate. Pretty good stuff.

grill them
season with salt, pepper, and fresh sage
serve over a bed of arugula, cranberries, pine nuts (or soy nuts), and a homemade vinaigrette

Make a 12 hour brine and add some orange and rosemary to the brine. Get home, wash breasts and put on grill.
Simple, good, and low fat.

My go to is a citrus marinade then grill. Top with caramelized onions, bellpeppers, and mushrooms and a little cheese (or not for extra healthy).
