Home Brewing: After a few delays, the time has come (Update P. 2)

Well, after a few delays, and much hunting about for equipment, i finally compiled all of the equipment i need (minus a wort chiller).

So my schedule is cleaning tonight, brewing tomorrow.

Cincinnati Pale Ale (from How To Brew) will be my first brew.

and i believe, if i have access to keeping my fermenter cool enough, my second batch will be a porter or stout of some sort.

Ahhh let me know how it comes out.. I was wondering about that recipes he has in there..

Havent tried any of the recipes in the book.

Nice. Staggered across this post digging through Google looking for brew store options since they closed the place on Jones Creek. How's the brewing coming?

Brewstock in New Orleans is the closest homebrew supply store. Alot better than the one that closed from what I hear.

Marcello's on Perkins has some equipment and ingredients if you need anything in a pinch. Hops, yeast, dry extract, grains, etc... I broke a hydrometer before one brew and they had them in stock, so that was nice!

Thanks for the headsup on Marcello's. That's about as far as I'm willing to drive for ingredients and in reality I'm probably only looking for things in a pinch.

I like to buy exactly what I want and for that I usually end up going mail order. Everytime I've gone to a brew store with a recipe I'm building I end up having to substitute something for something else.

Good luck man! Don't sweat it. It will turn out fine and be a learning experience.

Also, those darker beers will not benefit any more from temperature control than your pale ale, so try to control it as much as possible from the get go.

You would probably have to do this if you went to Marcello's looking for a full list of ingredients, but they are very useful if you need something no short notice. I prefer to order the ingredients I'll need from AustinHomeBrew.

Yeah, I bought a few things from there. I've been buying things here and there and didn't want to pay for shipping so I went to Marcello's. (they guy with the glasses knows his stuff from what I understand). But their selection is limitted. Decent yeast selection.

Liquid yeast?

How long ago did you visit?

How about hops? Any selection?

They had liquid and dry yeasts, and a decent hops selection last time I went, but it was a few months ago.

I just cant shop locally anymore. If I need something I can get it from AHS in like 2 days time. 8 dollars shipping beats the upcharge of most local places on many items. If I spend over 100 its free shipping too.

Right now Im trying to determine my next brew. Im thinking about a pecan brew and something with sour cherry or maybe a pepper brew.

What beers would you use sour cherry or pepper in? I am not terribly experimental, although I do put rye in a lot of beers. Now I have and IPA and a Citra wheat fermenting. I am planning a rye PA for tomorrow.

I made a "lambic" with mixed berries. I soured a mash overnight and then added berries to the secondary. Talk about refreshing. With out a doubt the most experimenting that I have every done brewing.

I was thinking of a Blonde Ale for the pepper. Maybe go with a few tabasco or serano peppers. I want something with a slight noticable burn but not overpowering.

As for the sour cherry Im thinking maybe actually going for something slightly nutty with it to combat the tartness of the cherry.. Maybe a brown ale.

A praline beer would be another idea I would like to try to create.. Not super sweet though just a brew with a since of caramel and a nutty flavor.

Two things that are not too hard to create with malts. Trying to get it to start with the caramel and finish with the nutty flavor though maybe tricky.
