Agree with Otis on the gumbo. That would be a disaster.
Buy some nice bell peppers, clean out the insides, stuff them with the jambalaya, eat a few and freeze the rest.
OR, have some friends over for dinner, this evening and serve it all up.
Have no idea is the balls will work, but since you have it, you could experiment. If the chunks of meat are too big, though, this could also be a disaster.

THIS is an excellent idea. I have some bellpeppers right now. I'm snowed in today, so I can have this for dinner tonight!!
