Need some suggestions...

I am supposed to be providing the main meal for our tailgate but am at a loss as to what to do. Did Boston butts this past weekend and things like pastalaya, jambalaya, red beans are all out as someone is making them at other games this season. Preferably something I can do the night before and only have to reheat at the tailgate.. TIA

My favorite go-to meals for a bunch:
1. Chicken and beef fajita bar with grilled onions and peppers, chips and salsa.
2. Beef brisket from Sams (pre-sliced and smoked) with BBQ sauce, buns, beans and slaw.
3. Chili with toppings and fritos (probably better for cooler weather)

Are other folks making the sides or are there any sides?
Does it have to be a hot dish?
What about poboys of various kinds with folks putting their own together? Roast beef, hot sausage all cooked and sliced before and warmed on site?

Other people will provide sides....there is always a lot of food but one "main" dish that we all take turns providing.
