You smoke the damn rabbit and then smother the SOB to reintroduce moisture and tenderize. Great for a sauce,gumbo,jam or beans.

Smoked rabbit in gumbo!!!!!!!!!!!!!!!!!! Smoke your rabbit, then make a gumbo with the meat!!

Excuse me Sir Otis for never having smoked a rabbit. I usually par-boil the damn thing, brown his cotton pickin arse in a cast iron pot, and then smother the SOB in a gravy with a bunch of damn onions and stuff.
