I will be moving to north Mississippi in a couple of months and I am considering opening a small cafe or restaurant with an emphasis on Cajun cuisine. My fiancee is from there and she thinks it would be a hit. I live for cooking and do so with a passion, and I believe that is my calling. Anybody want to offer a suggestion or share a fail?? TIA

owning a restaurant is tough. I would talk to other restaurant owners to see what you are getting into. And make damn sure it is in your blood, because it is your life.

I have a couple of friends that have tried to open similar things and had them fail miserably. I forget the exact statistic but I think like 70% of new restaurants fail in the long run. If you are a good businessman and can cook go for it. Just remember, cooking for friends and family is much different than for the masses.

Location/Visibility/Need/Wants??? It's a lot of work, and a ROI can be a long road if ever. And like stated earlier, cooking for masses is not fun to me. I don't like criticism from people that suck. Really think about how much you're willing to sacrifice to get it started, and if you have the financial stability to sustain the first few months if there isn't a buzz because some take a while to get jump started.
I help run a catering company, and a couple of weeks back I actually had a woman walk up to me and tell me that my crawfish were undercooked and she knows because she was from Lafayette. I wanted to give her a nice kick in the arse, but had to bite my tongue and tell her, "maam, crawfish are damn near cooked when they hit the water, and then they soak in scalding hot water for 20-30 minutes after they are cooked".

You're gonna be operating on razor thin margins and as long as you go in knowing that you are probably not going to see some (if any) returns for awhile, then go right ahead.

North Mississippi is generally anywhere north of I-20. Economic conditions, lifestyles and attitudes run the spectrum. Within reasonable and limited expectations, "good food" might work in a Memphis suburb, the two 'big' college towns or certain Delta areas . Anywhere else = prayers sent.
