Jay's BBQ sauce is Blue Plate BBQ Sauce that is cut with water or apple juice to thin it out. They used to sell it in the stores but now it is only available to the commercial restaurants in gallon jugs. If you call them in New Orleans they will direct you to a firm in Lafayette that will sell it to you. I have bought it from them before and they sell you four gallons since that is the case. Not a bad deal. I seem to remember it was about 10-12 a gallon and they UPS to me. I love it and need to buy some.

That said.

I don't measure just go for taste but use something like this.

bottle of ketchup, third bottle yellow mustard, steens syrup, crystal sauce, vinegar (white or whatever) salt pepper, garlic and onion powder, tomato paste in the tube. Maybe a little anchovy paste.

Just mix this up and keep adding until you get the right consistency. I normally heat mine and let it simmer on low to marry the concoction. Add whatever else you like. It is just kind of a base sauce but I like thin, vinegary sauces anyway. Add a little water to it if you want it thinner and have the right taste.

Blue Plate BBQ Sauce Concentrate used to be available from cajunsupermarket.com, but apparently not any more. I bought it from there twice, but it was very expensive, like $28 a gallon plus shipping. Instructions said to add 2 quarts of water and a pound of brown sugar.

Here is the ingredient list from the label:

Vinegar, Water, Sugar, Tomato Paste, Chopped Pickles, Soybean Oil, Mustard Seed, Salt, Paprika, Caramel Coloring, Garlic, Propylene Glycol Alginate, Spices, Artificial Coloring, Red Bell Peppers, Turmeric, Natural & Artificial Flavorings And Sodium Benzoate Added As A Preservative.

ETA: I once compared Blue Plate BBQ Sauce (thinned and sweetened) side-by-side with a quart of Dreamland Sauce I got from the founder of Dreamland, himself. The taste was almost identical.
