What would Saints have to give up to get one of these guys?

Umenyiora would be much more feasible to get than Peppers.

I thought this was answered the saints cannot go after any free agent next year unless we lose someone of equal value.

we cant go after any restricted free agent.
unrestricteds can do whatever they want.
that said, i doubt either of these guys are unrestricteds.

Here is the league's official explanation:
During the Final League Year, the eight clubs that make the Divisional Playoffs in the previous season have additional restrictions that limit their ability to sign unrestricted free agents from other clubs. In general, the four clubs participating in the championship games are limited in the number of free agents that they may sign; the limit is determined by the number of their own free agents signing with other clubs. They cannot sign any UFAs unless one of theirs is signed by another team.

If we're choosing between just the two, it's not even close, you go after Osi. The guy is still pretty young, and he's guaranteed to be the "man" here, like he wants to be. Would much rather have him than Grant for sure. I don't think you'll see that happen though.
