I was told Chicago Al was remodeling his shack and was closed last week.

I know a guy that is thinking about putting some carts on the street downtown and around LSU. He needs some advice on what to serve, dog's, buns, condiments etc... I know he lurks here so maybe the board will give him some advice.

And it's not me.

All beef hot dogs, chili, kraut, slaw, jalepenos, onions, relish, cheese, mayo, mustard, ketchup, bbq sauce, guac, salsa, hot sauce, just to name a few.

Kosher Dogs..Nathans..Hebrew National..Sabrett..Vienna..etc..

Does he want to carry Polish dogs? Knockwurst? Different sized Franks/Weiners?

Mustards..carts must stock plenty of varieties for all palates..Guldens..Heinz..Grey Poupon..Boars Head..Nance's Sharp & Creamy..Zweigle's..make own..etc..

Relish..Cascadian Farm Sweet Relish..Heinz(too HFCS)..Vlasic..Claussen..PickleGuys..Guss..make own..etc..

Buns..good luck..white bread?..whole bread?..store bought?..Whole Food..Target..food dist?..hot dog buns aren't exactly a baked art form in the deep south..needs to be able to handle commercial grade dog and it's toppings unlike most cr@ptastic store brands/sizes that are undersized and too thin/weak on the hinge.

NY dog? Chi dog? Polish dog? German/Vienna dog? Can I get a papaya or orange drink too?

Great dogs and condiments aren't cheap(especially since not found in the BR area or distributors..thus probably need to have some things UPSed in?)..gotta charge folks for this or move some serious volume?

remodel his shack ?

Not much there to remodel. But with out a doubt great hot dogs. Best this side of Chicago many will tell you..

Al started selling out of a cart in downtown many years ago..

He's a great guy and quite an accomplished blues musician
