I love the cab you recommended. Last weekend, I got a Hess Cab and it was great!
Any recc along that line?

Yes, for a good cab that won't set you back too much, try the Montes Alpha 2007 Cabernet Sauvignon. This is from Chile, like the Don Melchor that you tried.
It retails for around $24, but it can be found for less. I picked up a bottle last week at Costco for $18. I know you don't have Costco there, but I would think you could find this wine for less than the retail price if you look around.
The 2007 is stellar. Other vintages of the Montes Alpha are good, but get the 2007 if you're able to.

Does the bottle say Hess Select?
Hess Collection?
Hess is inconsistent. Some years the wines are very good and some years not so great. It's generally a good wine for the money.

The Hess Cabernet
and yeah. looks pretty cheap online. 7 a glass at a rest is pretty ok. I don't know the line. It was at Mike Anderson's in BR, so I doubt it was really high end.

Ah, okay. That was probably the Hess Select. The Hess Select is a beter deal that the Hess Collection. It's about half the price and one is as good as the other IMO.
Keep your eye out for the 2007 Montes Alpha Cabernet that I mentioned earlier. It's a very good wine. It got 91 points recently from the Wine Advocate magazine. 2007 was one of the best vintages ever in Chile. I've had the 2005 and 2006 of this wine and both were good, but the '07 is special. It's a little young right now, so if you find a bottle open it up at least an hour before you serve it.

ahh. ok. so If I like the Hess, I would like that one? I liked the Hess because it wasn't quite as bold.. but that is the purpose of a cab...or so I think.

The grapes for the Hess Select come from Napa, Monterey, Lake and Mendocino Counties. The resulting blend is going to be softer than if the grapes had come soley from Napa County. Plus, the Hess spends a lot less time in oak that the Don Melchor, and somewhat less than the Montes Alpha.
Part of the bold flavor profile of a cab is the grape (lots of tannins in a cab grape) and part of it is the oak.
If you like a softer cab, wines from Sonoma County might be to your liking.
The best way to find out what you like is just to try a lot of different wines. Some you will like, some you will not, but you will narrow and define what suits you. And your taste may change over the years.
