Fresh Quail Recipe

Got a pretty good recipe for fresh quail, but am looking for another...
Anyone have a good one??
Currently on the menu will be a shrimp and corn bisque and possible salad... Looking for a good quail recipe. could be grilled or roasted

are they skinned or plucked? Most are skinned which could lead to a dry bird. If skinned, I'd fry 'em.

partially debone (youtube is your friend on this one) and grill then top with pepper jelly.

We had some dedoned ones off the grill back in the Fall that a friend did by basting with Sweet Baby Ray's and pepper jelly. He'd also marinated them for a good while, but I'm not sure of the mix.They were awesome and he didn't dry them out.I'd taken drunk and forgotten about them.

that sounds delicous. Ive already done a marinade of maple syrup, chili past, crushed garlic cloves, and soy sauce. Im supposed to baste them every few min so they will not dry out.
Will give a report.

you will need the following: quail breast,creamcheese, jalapeno pepper, bacon, salt pepper and lawrys teriyaki sauce. place piece of cream cheese and jalapeno pepper on breast. rollup and wrap with bacon, place toothpick through bacon and quail so that it doesn't unroll. marinate in lawrys overnight and place on about 350 degree grill. once bacon cooks take off and bon appetite.

I actually looked in Langenstein's for quail the other day, but I didn't see it.
But I will try your recipe out when I get it.

Okay so this turned out to be a huge sucess.
I marinade the quail in equal parts low sodium soy sauce, and maple syrup, then added crushed garlic and chili paste. Throw them in the oven for 10 min at 450 then reduce to 350 and baste every min or so for another 10 min. Delish!
