Any good recipes?

Well a good quick one is go to Ronnie's on Florida just before Sharp and buy links of his boudin then take it out of the casing and use it for your stuffing. It's good.
My wife has the rice dressing/stuffing recipe and I'm not privy to it. I do know the secret ingredient is a couple of chopped fine chicken livers that have been parboiled.

Estimate on how long to keep on the grill?

Over kinda low heat or off to the side about 30 minutes I guess. Let the peppers cook and add the flavor to the meat. Somewhere in that area. Just don't burn them.
