Not sure yet. I was going to go to Off the Hook and select the fish based on a recipe I got from here. I grill all the time but have never done fish.

Get some untreated cedar wood and coat it in olive oil. Season your fish with a creole seasoning, i would avoid Tony's bc it is a little too salty. Place fish on top of plank and top with tomatoes and cook in grill. The wood will give it a nice smokey flavor and the tomatoes make it very moist. Top with pesto and then drizzle with a balsamic reduction. As an added bonus you can also top it with grilled shrimp or sauteed crab meat.

The recipe will work with any light flaky fish. It also can work well with Salmon

rub fish with olive oil then salt and pepper, grill to desired doneness

if you are gonna get fresh fish then taste the fish, save the marinade and goopy sauces for frozen fish

I am a fan of big, bold tastes....I'd go for a tuna steak grilled over some mesquite....I'd marinate it in your favorite steak marinade and season similarly as well....be very careful not to overcook...tuna done past medium rare is typically too dry...
