Just got a sweet griddle. Any food suggestions?

Already made some pancakes for breakfast and turkey burgers for dinner, both were very good.

French toast & grilled cheese sandwiches are much easier on the griddle because you can do multiples of them at a time.

lightly batter your veal or chicken parmesan, then instead of frying them, add a little oil to your griddle and lay them in the small pool of oil. Will come out light, crispy, and just plain awesome. (HAS to be a thin cut of meat)

Griddles (ETA: with grill plates) are money for making kabobs. If you're lazy, Kroger (at least here in Houston) typically has some pretty good ones.
