I know their have been numerous threads about this joint, but please, tell me what I must get when I visit there this evening...

Sopapillas.
Pancho's food honestly varies from location to location. Back in the days the Chalmette location used to kick the other locations asses, that was the one with all the Mexican cooks.

No doubt
I've had some surprisingly good enchiladas at one in TX once. I didn't care for the one they used to have on Florida...went there once and that was enough for me.
Do they have Chile Rellenos there?

No Mexicans.

They have at other locations. I haven't gotten around to eating at the new Metairie spot yet. As a New Orleanian, there's a certain nostalgia about the place. Plus I love the sopapillas, but if I'm driving back home to NOLA, I'd rather grab lunch at the Cuban restaurant on Loyola.

They guy managing the new Metairie location was the manager over at Bossier, so it's a safe bet that they've got them.

They finally have a Cuban place in Houma now.
It's pretty solid but the pork is a bit dry. Maybe just an off day for them.

Comments like this are the Food Board equivalent of "PIIHB"
Stopped being funny a long time ago, but for some reason people feel required to post them.

It is an all you can eat place. That means the food is not going to match the quality of most Mexican restaurants.
It is what it is.
I have never been a fan, but my best friend loves it. And many people must love it. The new location in Metairie has insane crowds.
