What should we do? I'm thinking Vail or Aspen but really don't know. I just started researching. I'd appreciate any input especially on restaurants.

Also I’ve never heard anyone refer to vail or Aspen as “North Colorado”

Walden, Co is the moose capital of Colorado.
Not much there except State Forest State Park, but the River Rock Cafe has an excellent steak.
That’s probably farther north than you’re looking for.

You will want to visit rocky mountain national park, so Estes park seems ideal.
