I can't watch the video due to being at work but I'm going to assume it touches upon the impossible arbitrary deadlines the studios are placing on these VFX companies. That and the poor pay they are getting, often working 50-60 hours a week to complete the visual effects shots before the scheduled release day.
Contrast that with VFX-heavy films like Avatar that are able to stretch the limits of modern technology due to being in post-production for five or more years.

Not watching that either, but I remember that when Life of Pi came out it was revealed that the bidding wars between CGI companies reduced their industry to making effects almost at cost. The company that created the effects for Life of Pi won a ton of awards as they had to close their doors and go out of business.

The issues are bidding wars, deadlines, but also the NUMBER of VFX shots - things like Dead Man's Chest had between 600 and 1000 VFX shots, while modern movies have over 3000. Couple the larger number of shots with reduced time and companies trying to do everything cheap in order to turn a profit and that's what you get.
They used two movies as examples of good CGI and why they managed it:
Avatar, which is a passion project for James Cameron and gets the time needed to make good effects
Sonic the Hedgehog, which the studio pulled off great effects... and went way over budget and went ouf of business.
