Wife had to get a new number. Is there a way to keep our old text string going with the new number? I have changed default to the new number, but all texts to it result in a new string.

I don’t think you can. Plus most people call it a text thread. Text string is a list of characters.

If you have the old and new number listed as mobile numbers in her entry in your contacts it might work. You would just need to have her text you and see.
Not sure how your phone would handle replying.
Or rename her contact with the old number as name - old number, then create a new contact with the new number. Go into the text thread with the old number, click the three stacked dots and choose Add People and add the new contact for her

what if you go to the old thread, click on the 3 dots in the top right corner, add people and add her new number?

I think I would struggle with voice to text. I'll have to try some of these suggestions over the weekend. Thanks everyone
