Smoked alligator recipes/tips

With Florida being this weekend, my friends and I are looking to throw a gator on the smoker. This is the first time I have done this so I am looking for any recipes/tips.

The one time I did it, I wrapped its entire body in bacon. There's little to no fat on that animal, so the meat will dry out pretty quick on a smoker.

Smoking is a bad idea for gator. Grilled, fried or a sauce piquant is a much better option.

Sauce piquant is the way to go

Yeah, they look cool on a rotisserie at the tailgate too. Just cook something good in a big pot so people won’t go hungry.
