Our latest fave is Chapala. It's not super hot, but has some heat and a lot of flavor.

Best hot sauce around CenLa, guaranteed! Custom blend of garlic & habanero peppers. Damn, it’s good!

Nice heat. There is more to it than the average hot sauce(texture and flavor profile) and by average I mean the "use it on anything types" not the "peel the skin from your mouth" types that are in this thread. I would compare it to Louisiana, Crystal, Texas Pete with more flavor and the perfect heat.
I've also recently tried some of the fermented hot sauces and those are pretty good too. The little $1 displays at WM have all kinds of different hot sauces in them. I've bought some really tasty ones out of there and found some decent bbq sauces.
