What are you guys doing with your trailing hand thumb? I've got pretty big hands, 9 7/8s thumb to pinky and my thumb just isnt comfortable crossing over. I tend to keep it on the "inside" of my club head, sort of like a pistol gas pedal if you know what I mean.

Is this messing with my swing or creating issues with accuracy?

I can guarantee you that whatever issue you’re having with your swing has nothing to do with this

How the hell is anyone supposed to know that?

If Scottie Scheffler described his swing to the internet, what kind of feedback do you think he would get?

The second I start thinking about this is when I start feeling uncomfortable no matter where I rest it.

Resting it to the left could leave the club face open, resting it straight down the middle could cause you to rollover too soon.

I change thumb position constantly even tho it's probably not advisable.

Trailing hand thumb is the least important finger in the grip by a wide margin.

I want to say Snedeker at one point took the club back with this right thumb off the club.

Your grip is the most fundamentally important part of your swing, it's the only thing that connects yourself to the club, so the answer is yes, it most definitely can affect your swing. Scottie Scheffler still uses one of these when he practices at home and before tournament rounds. It puts your hands in the correct position. If the #1 player in the world thinks enough about his grip, we all should too.

that's like asking "do you breath in or out when stroking a putt?"...

which I ask right before they take the putter back...

These unfortunately dont come on midsize grips. I bought one when I first started, and my bear paws do not fit.
