Got a few filets. What should I do with them? What kind of sauce? Thanks.

Sauce? no way on red snapper or any other gulf fish. Dredge in butter, season, then pan sear. We prefer a mango salsa as a topping. Just make sure the bloodline has been cut out of the fillet(s). That's it. Keep it simple.

Just blacken them to eat whole or for tacos
