Thinking about making the trip to Niceville to watch LSU the day after thanksgiving…
Any recommendations on waterfront accommodations?

That would be about two hours and 45 minutes to get there.
I like to stay in Marianna, Florida. There’s several opportunities to go kayaking in the springs or swimming if the weather is good. About a 45 minute drive to Tallahassee.
Hotel costs during game weekends is astronomically high in Tallahassee.

Niceville.
I have passed through there many times because that is one of the last towns you go through before you get to the bridge that leads to Destin.
I never thought of staying there for a vacation.
I am sure it is a nice town (and hence the name) but I would just drive the short distance further to Destin.

Yea was thinking that or Firt Walton beach. Didn’t know if there was a bay front hotel/air bnb or something that would be different

Not much in the way of hotels/condos along the bayou/bay in Nville.
There is a Hampton on Rocky Bayou and there appear to be many VRBO type properties in N'ville/Bluewater Bay.
Good choice to avoid the crowds. Niceville has some good stuff:
3rd Planet Brewing (maker of my 2nd favorite IPA: Dank Side of the Moon)
Post 20 or Bamboo for sushi
The Local's Eatery for gastro pub goodness on the bayou
Basil and Baxter for bistro type food
Tradewinds for classic Italian

That's a really great condo. I had a coworker years back that lived there and we spent way too much time at Schooner's.
OP, check this place. It hits all your marks.

Grew up in Niceville as a kid.
850 Wharf and while not on the water, 3rd Planet Brewing has a nice vibe
