Rouse's Prime Whole Briskets

Was in the store yesterday and they are going for $3.97 a lb.

They are whole, untrimmed. Wish they would have put them on sale a couple weeks ago so I could have brined a nice piece for corned beef and cabbage for St. Patrick's Day this coming Monday.

I grabbed one today.

Im sure there is a reason why they did not put them on sale 2 weeks prior to St. Patty Day lol.

Yeah, so they can sell those small packs of already brined by injection beef flats for $5+ a lb. and if more than 3 people are eating corned beef and cabbage, one is usually not enough.

Can you smoke those corned beef and make a pastrami? Or how do you cook that?

That is exactly what I do, soak for a day to pull the salt out, replace water 2-3 times and put rub on and smoke like a brisket.

Yes, you can smoke it to make pastrami or boil it in water for a few hours until tender to make corned beef.

I will buy a few briskets a year and I'll usually trim them good and render down the fat to make tallow and then put about 1/2 of one in my corned beef brine for 2 weeks and either make pastrami or corned beef. The other half is usually hit with a rub and smoked.

I need to give that a whirl. I see it says spice packet included. So are those pieces of brisket not cured yet?

No that is to put into the beef broth for the slow cooker which is what I did today. My oven has a slow cooker function







Came out great. Second one will be pastrami. I may go grab one more tomorrow morning for the freezer.
