Is there a more common name for these? I don't think I have ever seen denver steaks in the grocery store.

It is sometimes called a “chuck under blade” steak. The Denver Steak comes from an area under the shoulder blade called the “serratus ventralis.” The name is derived from the fact that it looks like a saw with serrated edges.

Probably won’t see them at most normal grocery stores because they aren’t a well known cut/big seller among normal grocery shoppers. Same with a Vegas strip.

An actual meat market should have what you need.

The Meatatory in Prairieville always has them available. Haven't seen Denvers by themselves in many stores. I usually just buy chuck roasts from the first couple of cuts & break them down into Chuck Eye & Denver steaks.

The butcher name for a denver steak is called a Boneless Chuck Flap. I always compare it to the flavor of a ribeye and the tenderness of a filet. Super rich. Its my new favorite cut of beef.

Also called a Zabuton steak, they used to serve this at Georgia James
