Whitewater center during the day if you have time and enjoy outdoor activities.
Check on in if Charlotte FC or the Charlotte Knights are playing home games.
Eat: Yunta, Calle Sol, Supperland, Stagioni, Ever Andalo
Bar hop in South End, Noda, or Plaza Midwood---three neighborhoods that are very walkable that have numerous breweries and bars.

I love walking the Rail Trail from downtown to South End for bar/brewery hopping. So many great patios.

If you are a NASCAR fan, the Hall of Fame is nice. Can also drive up to the Concord area and hit up some of the race shops.
If you are a history buff take the drive over to King's Mountain.

Pins Mechanical is in south end, they have duckpin bowling, pinball, and the arcade games are free. Tons of beer on tap. Good place for a group outing.
