"Best Damn Lemon pie ever"

3 egg yolks
1/2 cup lemon juice (fresh is best, esp this time of year get home grown lemons)
lemon zest from one lemon
1 can sweetened condensed milk
1 graham cracker crust ( i use shortbread crust instead)

beat egg yolks well, add 1/4 cup juice and zest and beat well, add condensed milk and beat well. Taste and add as much more lemon juice as you want until the right level of tartness is achieved (i like a lot), add to crust and put in 350 degree oven for 15 minutes, let cool and put in "ice box"

You can use the egg whites to make a merguine, or top with whipped cream, i dont like either and eat as is
