FWIW baker act is only in the state of Florida as far as I know and it’s for suicidal issues. When someone is attempting to hurt themselves.
You can also call the police and they can baker act. But this doesn’t sound like a baker act.
Have you tried tracking her phone or her car? If you are an owner of both I’d assume that’s perfectly legal to do? Ask an attorney.
You need to seek a mean arse attorney asap and protect yourself, your children, and your finances.
ETA: it sure sounds like drugs to me OP. Withdraw of cash, random crazy behavior, mood swings, etc. all screams drugs.
Idk if there’s a legal way to drug test a spouse like just taking some hair off a brush?

Sounds very similar to someone I know who got hooked on pills late 40's.
She eventually overdosed on morphine/various other prescription meds when she was 53.
No one even suspected she had any kind of access to morphine.
