NOLA industry folks: How much do you think they spent on the buildout of Pigeon and Whale?

Was talking about this the other day with some people. They had to spend a LOT on an already existing space. If you had ever been in there previously, its extremely different, and they added a lot of what look like expensive features and design elements.
They've done a real good job of turning it into a big time hotspot. They smartly made Cocktails and Desserts really interesting so every table in the place orders both, both huge revenue generators.
Regardless, anyone have any ideas on what they had to spend on that build out?

No clue but I know rent isn’t cheap there and the landlord isn’t good.
You’re right about the drinks and desserts. That lemon dessert is so good. I do wish the bar program was more varied vs focus on gin.

Looking at old pics of Bar Frances, it may not have been that extensive. Biggest costs to my eye would be custom exterior facade, custom bar shelving and lights, new flooring. Not sure if they had to revamp the kitchen too (I’d guess they did); that could add substantial costs.

Maybe it just seems very expensive. They did a good job for sure.

I still need to check out Pigeon and Whale. This is John Michael's place right?

Have you been in Taco Del Cartel in CBD. That also seemed like an expensive buildout.

Yeah, same guy. It’s him and the chef from Station 6.
