One of my kids is requesting this using cream soups. Mushroom and celery I plan on using. What else can I add to kick it up a notch?

Do it like the Mississippi Pot Roast recipe but substitute pork for beef roast.
I also add diced onions and mushrooms to the Mississippi recipe.

I've never made pork roast with creamed soups, but I agree that Mississippi pot roast recipe would work fine for a pork roast.

1/4 cup dried porcini mushrooms. Crumble them finely when adding them.
1 sprig of rosemary
2 or 3 sprigs of thyme.

My go to meal when I was single:
Salt and pepper your pork roast then sear it on all sides
Put in crockpot with a 3/4 cup water and can of cream of mushroom soup
Dice up a whole yellow onion and throw in a little garlic
1 pkg brown gravy mix
About halfway through cooking add some carrots and potatoes.
Cook till meat/carrot/taters are tender
Makes a fine meal

I would probably get a can of consommé and put that in there with the cream of mushroom.

DO NOT put pepperoncini peppers in it. Idk who started this trend, but it just tastes awful.
