I would get out of Dublin and rent a car.
Drive Straight to Galway (2 hrs) spend the night there and then drive to Cliffs of Moher the next morning. Then loop around to Limerick, see King John's Castle. Could also hit Rock of Cashel.
Drive back to Dublin through Wicklow National Park. Spend the last afternoon in Dublin Temple Bar area.
You won't have time for Dingle Peninsula or the Blarney Castle, but you can still see a lot of Ireland in 3 days. The countryside is beautiful and is the "real" Ireland. Dublin might as well be NYC or London.
I would prioritize the Cliffs over anything in Dublin.
We did the Guinness tour, it was fine but not a must do. We toured the Trinity College Library- again it was fine, but if you skip it you really haven't missed anything. But if you are in Ireland and don't visit the Cliffs then I feel you will have really missed out.
