Just like cooking, get your dishes above a certain temperature and any bacteria or germs on the dishes are dead, grease melts easier at high temperatures and becomes emulsified in the water like a dispersant with the dishwashing detergent. Some detergents also use enzymes for cleaning stubborn food.
