Don't overthink this, Loctite PL375 is $3 a tube and works great as a general purpose construction adhesive that is easy to work and clean up. I keep a case on hand and use it all the time for repairs on all kinds of substrates. I used it to tile the backsplash in my kitchen, only a small area and vastly easier than mixing up a batch of thinset.
