I know all collect data about us, and I know nobody but me cares, but I trust Google (Youtube) less than anyone.
Just buy a single month and try it out. I have Hulu with Live TV (no ads, lol,) and do have a bitching point. Depending on the network, the rules change.
Watching Soccer on USA, I can't rewind when it's live. If something is on Bravo, and it aired less than 24 hours ago, I can't fast forward through commercials, depending on the show. The rules are different if I recorded it, or if it's "on demand," even breaking down to which show it is. This kind of muckety much isn't exclusive to Hulu (something was released on 30 MAR on Prime Video, but it's marked as unavailable to me late on 31 MAR?)
There are all kinds of peculiarities it seems with all streaming services, but I can only speak to Hulu, Paramount Plus, Peacock, Disney+, Prime Video, and a few others. AppleTV and Netflix are by far the most consistent in displaying content when it's released.

Oh, look, the show on Prime I tried to watch two hours ago (released yesterday) and was unavailable, is suddenly now available.
