He's pointing out that in Shakespeare's time they didn't use female actors but rather pre-pubescent boys or guys with high voices to play all of the female parts.

And this story has been changed a dozen times - West Side Story, etc. - as have most of Shakespeare's works.

And in Leo and Claire Dane’s Romeo + Juliet (which was wildly popular in the late 90s) Mercutio was Black and the Capulets were Hispanic.

The story has been retold, not 'changed'. There's a difference.
