It would go well with that salad.
One of my favorite ways of eating cucumbers and tomato salad is to finely mince garlic and add it to vinegar and olive oil in a bowl, add some salt and black pepper and whisk it well to combine and pour it over the salad.
The only caveat is, it's pretty strong tasting with the garlic and not for everyone.
If any salad is left over, refrigerate it and eat later. It will be a bit wilted but packed with flavor.
