Weird, because those in charge of the elections have never provided evidence to prove every vote was legitimate and legal. Why are we supposed to trust them merely because they say so?

This is why we need paper ballots and in person voting. You prove your identity and the stacks of ballots are retained, counted, and available for recounting by anyone who cares to do so.
