They are cheap cuts that they get in bulk to keep price down and they cook the shite out of them until they fall apart. Then sauce them.

For the price and depending where you are, it’s a serviceable meal. There’s no reason for people to complain about the food at these places unless it’s cold or has rat shite in it.

That’s how I remember them, overcooked (hence tender) and heavily sauced. But heck, many people like them that way I used to but now I cook/prefer them mostly dry but still juicy, “bendy” tender, sauce on the side.
