When my mother baked whole hams on special occasions, she added left-over pickle to the water at the bottom of the baking pan. For ordinary fried ham steak, she deglazed the skillet with a small amount of pickle juice to make a thin gravy. She used both dill and sweet pickles. She claimed that she learned the method from her grandmother... west TN 1870's!
