I’ve read that any kind of sugar or sugar substitute can spoke insulin or something and hurt your fast. Why I’ve always stuck to black coffee

Sugar can. With respect to sugar substitutes, I've read conflicting studies. Personally, I think sugar substitutes generally aren't good, but I look at cutting those out as a higher level health thing, if that makes sense. For most people out there who are just looking to drop weight, I think they can be useful as a calorie cutting tool.

and none of that has to do with losing bodyfat.

losing bodyfat is about caloric deficit and then enough protein to maintain muscle. nothing else matters until you are below a true 10%
