After playing Elden Ring, I seriously doubt Dark Souls would offer any real challenge.

there's a lot of truth to this. Elden Ring has a ton of really fast bosses. Dark Souls not so much. I've done 3-4 complete NG playthroughs in Elden Ring so I'm guessing the practice there has led me to gettting through DS1 pretty easily.
