My go to. I have made a lot of believers with this recipe. It is amazing with any smoked meat except beef, IMO. It is especially good with smoked chicken and smoked sausage.

2 cups mayo
1/2 cup apple cider vinegar
1/4 cup prepared horseradish
2 tbsp lemon juice
2 tsp black pepper
2 tsp yellow mustard
1 tsp kosher salt

I just put some Duke's mayo in a bowl and add apple cider vinegar equal to about 1/4 of that mayo. Then add a lot of freshly ground black pepper. Mix together and adjust to taste. Add salt if needed, maybe worchestershire, horseradish, and a bit of lemon.
