I'm using the fact that you've clearly never fried catfish for multiple people as a basis for you not knowing wtf you're talking about. Sell people fish plates with 2 4oz fillets, in the south, and see how that goes.

That’s why you use 2-3 ounce SPLIT and give them 6 pieces.
We aren’t dumb enough to serve 4 ounce pieces.
FYI, On average, I coordinate 3,000 fish dinners annually for fundraisers. I’ve been doing it for 15 years.
