I’ve never cooked one that low. I wouldn’t recommend it but that doesn’t mean it won’t work. Try it and let us know.

A good rule of thumb is 1 hour per pound at 250. So at 250, you’ll figure you’ll need a 13 hour cook.

Assuming you’re using a pellet or electric smoker to keep the temp constant overnight? If so, put it on at 11 pm. It should be ready around noon the next day and let it sit warm in a cooler until 5:00. Of course, if its a stick burner, then you can’t keep the temp constant without waking up.

yes, using a pellet smoker. And just putting it on 180 overnight until 165. Then wrapping it and taking it to 202.
