A few months ago decided to try seeding a few beets, and now they're coming in... which brings me to my next question: what the hell do I do with beets?

I really wish I liked beets. Super healthy for you. But to me they taste just like the dirt.

Roast them with potatoes, carrots, onions (any other root veggie) and eat as a side?

Spiced Pickled Beets

3 pounds beets
2 tsp Kosher salt
1-1/2 cups apple cider vinegar
1 cup sugar
3 bay leaves
1 tsp pumpkin pie spice
pinch of allspice
pinch of ground cloves
1/2 tsp black pepper

Roast beets at 375* in baking dish with 1 cup water, cover with foil and bake for an hour. Cool beets, peel and cut into wedges or slices.

In a medium saucepan combine remaining ingredients with 1/2 cup water. Bring to a boil and simmer 10-12 minutes. Pour liquid over beets and let cool. Refrigerate overnight.
