They do come in handy for soups and sauces and I use mine more than enough to warrant having it.

Also good knives along with the tools and a knack for keeping them sharp.

I also use my chinois often to strain stocks and it's a must have for me.

Quality pots and pans and I've gone to all heavy duty stainless steel after years of coated pots and pans that eventually fail.
