Fascinating question. Unions generally work this way: A group offers to represent the college athletes and all eligible athletes get to vote on accepting them. Now, do volleyball players get to vote? Is the union just for football?

Assuming a union is formed, each school would have an elected "union representative" similar to the NFL players union. You'd have 20 year olds serving as representatives for their schools. It would be a full time job in addition to classes and playing. They'd have to be the go-between on discipline cases, contract negotiations (including special issues only for their school), etc.

What could go wrong. I don't see it working as a traditional union but hey, anything is possible in the wild Wild West of college athletics.

If baristas at Starbucks can Unionize and succeed then I have a faith a Long Snapper or kicker with a 3.8 Gpa in Business can represent the student athletes well.
