Smothered specks with mushrooms:
2 cleaned and quartered geese
2 diced yellow onions
2 lbs of button mushrooms
2 tbs Tony’s seasoning
1 (20oz) Coca Cola
1 bunch of green onions diced
1 bell pepper diced
1 tbs garlic powder
1 tsp black pepper
1/2 cup of vegetable oil
Water
Season geese quarters with Tony’s, garlic powder and black pepper and brown meat in oil stirring often on high heat. When meat is dark on all sides, add all onions and peppers and stir often for about 10 minutes then add the bottled of Coca Cola and enough water to cover meat in pot. Reduce heat to medium and cook 2 hours. Stir mushrooms in and stir occasionally for about 45 minutes. Serve over cooked rice and enjoy.
