2 weeks is a long time. I would plan on 3-4 days in the Algarve. 3-4 days in Lisbon. A couple of extra days in Porto on non conference time. An overnight in Douro Valley.
Adjust if you want to go to Spain which is absolutely doable.

I recommend 2 to 3 full days in the Douro. Absolutely amazing place, especially if you want some rest and relaxation.
Not sure on your financials, but stay at one of the Quintas. I’d recommend Quinta do Vallado or Quinta da Gricha, but there are several others.
The wife and I also took a private tour with LAB Tours. They curate it for you and lunch is included.
The Douro Valley is genuinely one of my favorite places in the world, let me know if you want more details on my trip.
