I cover until beans are cooked, mash some to help with thickness and then simmer uncovered until I get the desired thickness.

I soaked them overnight, they are tender after about 1 and a half hours cooking. Covered 10 mins, then light skimmer.

Way faster than I thought.

Eta. Put on low for an hour to thicken them up.
